What is the best estimate for one slice of pizza?

The best single estimate is 285 kcal for a regular cheese slice, provided the slice resembles the USDA reference. FoodData Central record 173292 describes a 14-inch, regular-crust, fast-food-chain cheese pizza. It gives 266 kcal per 100 g, a whole-pizza weight of 853 g and a slice weight of 107 g. The calculation is:

`107 g × 266 kcal ÷ 100 g = 284.62 kcal`

Round that to 285 kcal in a food log. The whole and slice weights also imply about eight equal pieces: `853 ÷ 107 = 7.97`. USDA does not call the slice one-eighth in that record; eight is the result of the weight arithmetic.

That distinction matters. “One slice” is a cutting instruction, and a cutting instruction says little until the pie’s diameter and cut count are known. A sixth of a 12-inch pizza has 33% more surface area than an eighth of the same pizza. Dough mass, cheese application and oil can still reverse what the eye expects.

The Costco document lists a 57 oz whole cheese pizza at 4,260 kcal and a 9.5 oz slice at 710 kcal. Both pairs divide by six. Its diameter is absent, so I will leave that field open rather than repeat the widely circulated 18-inch claim without a matching figure on the nutrition sheet.

How can you check the calorie figure yourself?

Match the product first, then weigh it. A pizza calorie calculator is only as sound as those two inputs. This four-step check works for takeaway, frozen pizza and a homemade pie with known ingredients.

  1. Find the matching label or dataset record. Match the brand or restaurant, crust, diameter, toppings and serving fraction. FDA consumer guidance says serving size reflects the amount people typically eat and is not a recommendation. Read both “servings per container” and “serving size.”
  2. Weigh the edible slice. Tare the plate, place the cooked slice on the scale and record grams. If you leave the outer crust, weigh that remainder and subtract it. Compare cooked food with a cooked-food reference.
  3. Calculate the slice. When a source gives kcal per 100 g, use `slice grams × kcal per 100 g ÷ 100`. A 125 g cheese slice matched to the USDA density is `125 × 266 ÷ 100 = 332.5`, or about 333 kcal. When a label gives kcal per serving, use `slice grams ÷ labelled grams × labelled kcal` only when your slice is the same product.
  4. Record what remains uncertain. Use the exact label when it exists. For an unmatched restaurant slice, write a range or use the upper matched example if undercounting would disrupt your target. Do not combine the crust figure from one chain with the topping allowance from another.

It is midday, my lunch is already late, and I would still spend the extra minute on the scale. At the USDA cheese density, a 20 g weighing error changes the estimate by 53 kcal. Calling a slice “pepperoni” while keeping its mass correct can be a smaller error: USDA records 266 kcal per 100 g for cheese and 282 for pepperoni, a difference of 16 kcal in a 100 g portion.

The fitter’s rule applies cleanly here. Read the data plate, measure the output, then calculate. Guessing from the triangle is the food equivalent of diagnosing a filler while refusing to look at the hopper setting.

Crust thickness belongs in the identification check. The 2024 Associazione Verace Pizza Napoletana production regulations specify a baked center about 0.25–0.30 cm thick, with a tolerance of ±10%, and a cornicione 1–2 cm high. The same standard gives a 200 g dough ball as its example for a 22–24 cm pizza and 280 g for a 28–35 cm pizza. Those dimensions describe a different product from a uniform pan base or a cracker-thin chain crust.

The AVPN Margherita recipe also specifies 60–80 g peeled tomato, 80–100 g mozzarella or fior di latte, 6–7 g olive oil and an optional 5–7 g hard cheese for the whole pizza. This is a manufacturing specification rather than a nutrition label, so it cannot supply kcal by itself. It does show why “extra cheese” needs a mass, and why crust thickness should guide source selection rather than serve as a calorie conversion factor.

My unwelcome view from machinery work is that pizza style begins with geometry. Dough division fixes the available base mass; forming fixes thickness and diameter; dispensers fix cheese and topping mass; the cutter decides the serving. Flavour reaches the diner through that equipment-defined portion.

Why is a Costco or New York-style slice the useful comparison?

Costco and New York-style slices expose portion geometry better than a cheese-versus-pepperoni comparison. The Costco Food Court nutritional facts sheet lists its cheese slice at 9.5 oz, about 269 g, and 710 kcal. That serving weighs 3.1 times as much as Domino’s 87 g New York Style cheese serving and carries 3.55 times the energy.

Domino’s provides a particularly neat machine-room comparison. Its April 2024 guide defines the 12-inch hand-tossed cheese serving as one-eighth of a pizza and the 12-inch New York Style serving as one-sixth. Despite the wider angle, the listed components total 85.4 g and 200 kcal for hand-tossed versus 87 g and 200 kcal for New York Style. The New York crust allowance is 41 g per sixth; hand-tossed crust plus garlic-oil blend is 43.4 g per eighth.

Cut count alone therefore fails even inside one chain and one diameter. The forming method redistributed roughly the same serving mass over a larger sector. By contrast, Costco’s documented cheese portion is physically larger by weight and more energy-dense: about 264 kcal per 100 g for Costco versus about 230 kcal per 100 g for the Domino’s New York Style component total.

For a large foldable restaurant slice with no label, weigh it before borrowing either figure. An 87 g slice can reasonably match the Domino’s example; a 269 g slice belongs near the Costco comparison. A photo cannot settle a 182 g difference.

How exact is the number on a pizza label?
